Elephant garlic has a mild taste and huge succulent cloves, which you can eat raw – grated into a salad – or cooked. If you garden on heavy soil like mine, this is the garlic to grow.

This produces a beautiful purple flowering head – which should be snipped when it emerges to get the best bulb for eating.

Sowing, Seeds, Planting Best planted out September - October. Split the bulb into cloves and plant these individually, each clove upright, with the flat base down and pushed into the soil to twice their own depth, spaced at intervals of 12in/30cm.
Care Tips Planted in a herbaceous border, this tall and elegant plant adds glamour and interest. They need very little after care. Just nip off the flower bud if one appears and keep the area weed-free.
Storing Dry in store trays. If the weather is fine, they should be dry in about 3 weeks.
Harvesting June. Harvest before the bulb begins to split.
Cooking Notes This is delicious roasted or in stir-fries. It has a slightly milder flavour, that works well in oriental dishes.
