This variety of amaranth self-seeded into our garden, just one plant in 2017 and we were all obsessed
In 2018, we found the seed and trialled it again. We picked and picked from it to arrange with almost all colours, soft and bright. It has a great vase life and the young leaves are used as 'Horta' in Greece.
Amaranthus leaves can be used in stir fries, as you would pak choi. It's also delicious slightly wilted with lemon and garlic, as you might cook spinach.
