My favourite granola/muesli
This is a good healthy way to start the year and start the day. Hard to beat, with a delicious taste and texture and very sustaining. Serve with natural yoghurt, topped with fresh fruit. Kept airtight, it stores for a month or more.
Fills 2 x 1 litre Kilner jars
- 500g jumbo oats
- 200g millet flakes
- 200g rye flakes
- 200g barley flakes
- 100g pumpkin seeds, whole or roughly chopped
- 100g sunflower seeds
- 100g milled organic flaxseeds
- 100g sesame seeds
- 100g Brazil nuts, chopped
- 100g chopped or flaked almonds
For the coating
- 150ml maple syrup or clear honey
- 100ml warm water
- 100ml cold-pressed rapeseed oil or 4 tablespoons set coconut oil
To finish
- Dried fruit (goji berries, blueberries, cranberries, apricots, sour cherries or raisins), roughly chopped
Preheat the oven to 180-200°C/gas mark 4-6.
Mix the oats, flakes, seeds and nuts on a baking tray. Mix the maple syrup or honey with the warm water and oil. Add this liquid to the dry ingredients and mix thoroughly, so that they are well coated.
Place in the oven and bake for about 20 minutes, stirring through at regular intervals: start with 4-minute intervals and as the ingredients warm up, change to 2-minute intervals. Don’t get distracted – the granola will burn easily.
Remove from the oven and allow to cool.
