Storing On a light soil, carrots are best left in the ground. Even after the frosts, leave them where they are, covering them with a thick layer of straw. On a heavy soil, dig them up and store.
Harvesting 8-10 weeks from sowing, as required. June - October. Harvest in the evening to deter carrot root fly. Lift by November to store over the winter months.
Cooking Notes Pulled in summer, these are lovely just washed and eaten raw, or cooked very simply - steam them for 6-7 minutes, or try Sarah's delicious Slow-roasted carrots with garlic lemon butter recipe when these have been sown later in the season. Carrot tops can also be eaten.
