This red chicory is extremely hardy and can be grown for eating straight out of the garden or for a less bitter taste for forcing in the dark inside. It's shaped like the classic bullet Whitloof chicory, but in a handsome deep red. Excellent raw and cooked.

I am mad keen on chicory. They are incredibly hardy, totally invaluable plants for the winter vegetable patch and not nearly widely enough grown in Britain. I like chicory raw in a mixed leaf salad but it's even better cooked when the leaves lose their bitterness.

Sowing, Seeds, Planting Direct sow 1.5cm (½in) deep into finely-prepared soil, in rows spaced 30cm (12in) apart from late May to July or into individual cells under cover for planting out later.
Care Tips Plant out 15-30cm (6-12in) apart in a sunny spot with fertile, well-drained soil. Keep moist at all times, to avoid it becoming bitter.
Harvesting Harvest October-April. Remove the outer leaves as required or cut above the root. The stump will resprout if left so you can harvest more leaves later. Can also be used as a winter forcing variety.
Cooking Notes Wash leaves well, and cook to bring out the sweetness - try Sarah's Chicory and lemon pasta recipe with pancetta and white wine. Or enjoy raw with strong cheese and citrus flavours. The flowers are also edible.
