baked feta with thyme and tomatoes recipe
Simple to throw together and chuck on the fire or in the oven, Saganaki is Cretan shepherds' food - simple, imprecise and always delicious.
Dip into the parcel with raw carrot or celery chunks, or warm flatbread (which you can heat on the stones around the fire).
serves 6 - 8
- 3 x 200g packs of feta cheese, broken into roughly 2cm pieces
- 6 sprigs fresh marjoram or thyme
- 20 small cherry tomatoes
- 20 capers
- 15 Kalamata olives, halved and stoned
- 2 tablespoons olive oil
- aluminium foil
Pile everything on to a large square of foil, wrap securely and place in or near the fire for 10-15 minutes, until the cheese is bubbling and browning on top (look inside to check).
Serve each parcel on a plate with flat bread and cucumber salad on the side.
