Rhubarb and Star Anise Bellini Mocktail/ Rhubarb & Star Anise Spritzer
- 500g rhubarb
- 3 tsp caster sugar
- 1 star anise
- 1 bottle of champagne or prosecco
Put the rhubarb, sugar, and a splash of water in a pan and bring to simmer until the rhubarb is soft. Take it off the heat, let it cool, and leave for a few hours for the star anise to infuse.
Remove the star anise and put the rhubarb into a food processor and put the smooth mixture into a jug.
Pour a little pulp, no more than 1cm, into the bottom of a champagne glass and top up with champagne or prosecco.
