Detox summer fruit salad
Pile the very healthiest fruits – strawberries, blueberries, blackcurrants, raspberries, kiwi, apple, mango and pomegranate seeds – into a big bowl to marinate in a little honey flavoured with lemon verbena. Add some dried fruit too, which is more filling than fresh. Scatter toasted pumpkin and sunflower seeds over the top to make this even more nutritious and sustaining. This salad is best eaten within 24 hours.
Serves 4 (or 8 if served with yoghurt)
For the fruit salad
- 500g strawberries
- 150g blueberries
- 150g blackcurrants
- 200g raspberries
- 1 or 2 apples, diced (not peeled)
- 4 kiwi fruit
- 1 mango
- 1 pomegranate
- 1 tablespoon finely sliced dried apricots
- 1 tablespoon finely sliced stoned dates
for the syrup
- 2 tablespoons clear honey
- 15-20 verbena leaves
Put all the ingredients (apart from the ice) into a blender and blitz.
Pour into three glasses, with or without ice, and serve.
