This red chicory is extremely hardy and can be grown for eating straight out of the garden or for a less bitter taste for forcing in the dark inside. It's shaped like the classic bullet Whitloof chicory, but in a handsome deep red. Excellent raw and cooked.
I am mad keen on chicory. They are incredibly hardy, totally invaluable plants for the winter vegetable patch and not nearly widely enough grown in Britain. I like chicory raw in a mixed leaf salad but it's even better cooked when the leaves lose their bitterness.
