One of our greatest revelatory plant combinations of last spring, a purple leek growing with different coloured tulips and picked to arrange with them too. We absolutely loved this edible and hugely ornamental pairing.

Sowing, Seeds, Planting Sow under cover in modules February-March, one seed per module. Plant out when seedlings are 15-20cm (6-8in) tall or the thickness of a pencil. Sow outdoors April-June into a seedbed for transplanting into their final positions or sow direct where they are to crop. Sow thinly 1cm (½in) deep in rows 15cm (6in) apart. Thin to 15-20cm (8-10in) or closer for slim, mini leeks.
Care Tips When planting out, insert each plant into a hole 15cm (6in) deep made with a dibber. Ensure there are some leaves above the soil level, but do not backfill the hole with soil. Just water in and soil will eventually wash down into the hole itself. That's what blanches the base of the leek.
Storing Store in the ground and harvest as needed. Store in an airtight bag or container for up to 3 weeks in the fridge.
Harvesting October - May. The leaves change from blue-green to deep purple during the winter months (Northern Lights). Leave the odd one to run to flower. They look good and the allium heads are full of nectar for bees and butterflies.
Cooking Notes Ideal for soups and stews, and makes an excellent replacement for onions. Finely chopping leeks brings out their flavour and texture. Delicious gently fried with a little lemon and sage. Perfect in pies too.
